Head Cafeteria Chef

About the role

We are looking for an experienced Head Cafeteria Chef to lead the food service operations at Fairmont The Norfolk in Nairobi. The successful candidate will be responsible for delivering high-quality meals, managing the cafeteria team and ensuring compliance with food safety standards.

Key responsibilities

• Plan, develop and execute diverse menus that meet dietary preferences and nutritional requirements.
• Oversee daily food preparation, cooking and plating to maintain consistent quality and presentation.
• Supervise, train and motivate cafeteria staff, providing performance feedback.
• Implement and enforce strict food safety and hygiene protocols in line with local and international regulations.
• Manage kitchen inventory, including ordering, receiving and storage of food and supplies.
• Monitor food costs, control budgets and maintain quality standards.
• Maintain kitchen equipment, troubleshoot issues and ensure smooth operations.
• Collaborate with other hotel departments to support special events and address customer feedback.

Required profile

• Proven experience as a Head Chef or similar leadership role in a cafeteria or food-service environment.
• Advanced culinary expertise with strong menu development skills.
• In-depth knowledge of food safety regulations and sanitation practices.
• Demonstrated ability to supervise, train and manage a team.
• Experience in inventory management and cost control.
• Excellent organizational and time-management abilities.
