Galley Supervisor

About the role

Amentum is seeking a Galley Supervisor to lead daily food service operations for a US Navy program on Diego Garcia. The role ensures that all meals are prepared, served, and documented in line with contract requirements, military standards, and food‑safety regulations.

Key responsibilities

• Oversee all Dining Facility (DFAC) operations, including food preparation, meal service, sanitation, and facility management.
• Supervise staffing, create schedules, and coordinate execution of daily food‑service requirements.
• Prepare large‑volume meals using multiple cooking methods while maintaining quality and timeliness.
• Ensure compliance with contract specifications, technical manuals, AR 40‑25 nutrition standards, and health‑promotion guidelines.
• Implement and monitor food‑safety programs in accordance with AR 40‑656, AR 40‑657, AR 40‑660, DOD Hazardous Food and Nonprescription Drug Recall System, TB MED 263, and TB 530 Tri‑Service Food Code.
• Provide technical guidance, training, and mentorship to DFAC personnel.
• Maintain required documentation, reports, and records.
• Adapt to changing priorities while preserving service standards.

Required profile

• Minimum two years experience supervising food‑service operations, preferably in Navy or military environments.
• High school diploma or equivalent.

Required skills

• Knowledge of AR 40‑656, AR 40‑657, AR 40‑660 food‑safety regulations.
• Familiarity with DOD Hazardous Food and Nonprescription Drug Recall System.
• Understanding of TB MED 263 and TB 530 Tri‑Service Food Code.
• Large‑volume meal preparation techniques.
• Staff scheduling and supervision.
