Chef – Hot Kitchen (Full‑time)

About the role

We are seeking a skilled Chef to lead our hot kitchen operations in Westlands, Nairobi. You will be responsible for preparing high‑quality hot meals, maintaining food safety standards, and supporting a fast‑paced service environment.

Key responsibilities

• Prepare, cook and present hot dishes according to approved recipes and portion sizes.
• Complete mise en place, ensuring all ingredients, equipment and workstations are ready before service.
• Maintain strict food safety, hygiene and HACCP compliance throughout preparation and service.
• Monitor inventory, apply FIFO principles, label foods correctly and minimise waste.
• Operate and maintain kitchen equipment safely, reporting any faults promptly.
• Supervise and coach junior kitchen staff, fostering teamwork and effective communication.
• Assist with menu planning, recipe development and the introduction of new menu items.

Required profile

• Diploma or degree in Culinary Arts, Professional Cookery or a related field.
• 2–3 years experience in a professional hot kitchen within a hotel, restaurant, resort or catering operation.
• Proven ability to prepare both local and international cuisine in a high‑volume environment.
• Strong understanding of food safety, sanitation and hygiene standards.
