Executive Chef – Luxury Hotel

About the role

The Executive Chef will lead the culinary operations of MGallery Nairobi Gigiri, a luxury boutique hotel with four distinct dining venues. Reporting to senior culinary management, you will be responsible for delivering high‑quality food experiences that reflect the brand’s standards and local market trends.

Key responsibilities

• Set periodic budgets and forecasts; analyse monthly P&L and month‑end reports to identify deviations from business plans.
• Develop and maintain departmental SOPs, policies, and service standards in line with hotel and municipal requirements.
• Lead menu development, product innovation, and detailed costing to support new offerings and promotions.
• Ensure strict adherence to HACCP and hotel food safety and hygiene standards across all outlets.
• Oversee cleanliness, organization, and weekly walk‑throughs of kitchen areas.
• Collaborate with other department heads to foster effective working relationships and respond to market needs.
• Maintain comprehensive departmental reports, schedules, recipes, menus, and presentation documentation.
• Represent the hotel in interactions with local community representatives and potential guests.

Required profile

• Strong culinary background with experience in luxury hotel brands.
• Proven ability to stay current with culinary trends and market demands.
• Excellent knowledge of food safety, HACCP, and hygiene regulations.
• Professional appearance and personal hygiene standards.
• Willingness to attend briefings, trainings, and emergency procedures.
