Assistant Baker

About the role

We are looking for an Assistant Baker to support our bakery production team in Nairobi. The role involves assisting in the preparation, baking, and quality control of a variety of bakery products while maintaining high standards of hygiene and safety.

Key responsibilities

• Assist in preparing and baking breads, buns, pastries, cakes, and other bakery items according to approved recipes.
• Measure, weigh, and mix ingredients accurately and prepare doughs, batters, fillings, and toppings.
• Operate ovens, mixers, proofers and other bakery equipment safely and monitor baking times and temperatures.
• Inspect finished products for taste, texture, appearance and weight, reporting any quality issues.
• Maintain cleanliness and sanitation of the production area, following GMP and food‑safety procedures.
• Receive, check, store and rotate baking ingredients using FIFO principles.
• Perform basic equipment checks, clean utensils and workstations, and report faults promptly.
• Follow daily production schedules, collaborate with the Head Baker and team to meet targets, and assist with packaging and dispatch.

Required profile

• Minimum 3 years of experience in a bakery or food‑manufacturing environment.
• Understanding of food safety regulations and Good Manufacturing Practices.
• Ability to work accurately under time pressure and follow standard recipes.
• Good personal hygiene and willingness to wear appropriate PPE.

Required skills

• Operating baking ovens, mixers and proofers.
• Accurate measuring, weighing and mixing of ingredients.
• Food safety and hygiene compliance (GMP).
• Inventory management and FIFO stock rotation.
• Basic equipment maintenance and fault reporting.
