Cost Controller – Hotel Cost Management

About the role

The Cost Controller will support MGallery Nairobi Gigiri in managing and auditing all cost‑related activities across food & beverage, stores, and general hotel operations, ensuring accurate cost reporting and control.

Key responsibilities

• Implement the hotel’s cost control objectives and policies.
• Develop and maintain effective auditing systems for Materials Management activities.
• Audit daily receiving variance reports, price and quantity variances.
• Verify inventory transactions, make adjustments, and reconcile inventory variations.
• Ensure recipe accuracy and cost calculations for all outlets and kitchens.
• Provide daily and monthly cost summaries to Accounting and Control departments.
• Supply department heads with cost figures for individual profit‑center performance.
• Prepare daily comparison reports of actual vs. potential Food & Beverage costs and sales.
• Reconcile officer and entertainment checks and apply appropriate credits.
• Analyse general stores issues against budget and journalise month‑end figures.
• Monitor and correct data entry by operational staff.
• Maintain organized files of cost audits, equipment, FF&E, and non‑system inventory records.
• Conduct market surveys and spot‑check purchase orders to keep prices competitive.
• Investigate spoilage, verify unit‑of‑measure accuracy, and audit minibar and liquor handling procedures.
• Review par stocks, inventory on shelves, and VIP amenity conversions.
