Assistant Head Chef

About the role

The Assistant Head Chef supports the Head Chef in delivering exceptional dining experiences at Angama’s safari lodge. This on‑site role combines leadership, creativity and rigorous standards to ensure every guest enjoys high‑quality, memorable meals.

Key responsibilities

• Assist in day‑to‑day management of kitchen operations and service delivery.
• Ensure food is prepared and presented to the highest standards of quality, consistency and guest satisfaction.
• Supervise, coach and develop kitchen team members, fostering a positive work environment.
• Contribute to menu planning, recipe development and the introduction of new culinary ideas.
• Monitor food safety, hygiene and cleanliness across all kitchen areas.
• Support stock management, ordering, storage and inventory control.
• Minimise food waste and help maintain cost‑effective kitchen operations.
• Collaborate with lodge teams to provide seamless, personalised guest experiences.
• Take charge of kitchen operations in the Head Chef’s absence.
• Participate in training initiatives and continuous improvement programmes.

Required profile

• Diploma or Certificate in Culinary Arts, Food Production, Hospitality Management or a related field.
• Previous experience in a senior kitchen supervisory role, preferably within hospitality or lodge operations.
• Strong knowledge of food preparation techniques, kitchen operations, food safety and hygiene standards.
• Experience supervising and developing kitchen teams.
• Understanding of stock control, food costing and kitchen administration.
• Excellent communication and interpersonal skills.
• Ability to work flexible hours, including weekends and public holidays.
