Chef (Nyama Choma) – Full‑time

About the role

We are looking for an experienced Chef specialized in Nyama Choma to join our kitchen team in Westlands, Nairobi. You will be responsible for preparing and grilling a variety of meats to the highest quality standards while ensuring food safety and customer satisfaction.

Key responsibilities

• Prepare, marinate, season and grill beef, goat, chicken, pork and other specialty items according to recipes.
• Monitor grill temperatures and cooking times to achieve optimal taste and presentation.
• Maintain cleanliness and organization of grilling stations, equipment and preparation areas.
• Manage stock levels for meats, spices, charcoal and report replenishment needs.
• Minimize food waste through proper storage, handling and portion control.
• Collaborate with kitchen and service staff to ensure timely order preparation.
• Assist in menu development and suggest new grilled offerings.

Required profile

• Minimum 2 years proven experience in Nyama Choma or grilled food preparation.
• Certificate in Food Production, Culinary Arts or related field is an advantage.
• Strong knowledge of meat cuts, grilling techniques and seasoning.
• Good understanding of food safety, hygiene and sanitation standards.
• Ability to work flexible hours, including evenings, weekends and public holidays.
