Executive Chef

About the role

The Executive Chef will lead the culinary operations for Accor’s luxury hotel in Westlands, Nairobi. Reporting to senior culinary management, you will be responsible for delivering high‑quality food experiences, driving innovation, and ensuring strict compliance with safety and hygiene standards.

Key responsibilities

• Set periodic budgets, forecast financial performance and analyse monthly P&L reports to identify deviations from business goals.
• Develop and maintain departmental SOPs, policies and service standards in line with hotel and municipal requirements.
• Lead menu creation, product development and accurate costing, collaborating with the senior culinary team.
• Oversee food promotions, ensure food safety (HACCP) compliance, and monitor food standards across all outlets.
• Conduct weekly walk‑throughs to maintain cleanliness and organization of kitchen areas.
• Prepare and submit departmental reports, schedules, recipes, menus and visual presentations on time.
• Identify market trends for menu offerings and interact with local community representatives and guests.

Required profile

• Strong culinary background with experience in luxury brand environments.
• Demonstrated leadership, communication and ability to uphold the highest standards.
• Proven track record in safety and sanitation compliance, including HACCP.
• Ability to manage multiple priorities, analyse financial data and drive customer‑focused service.
