Lead Baker

About the role

The Lead Baker will oversee all bakery operations at Kinnes Foods Limited in Nairobi, ensuring product quality, efficient production, and continuous innovation. This hands‑on leadership role combines daily production management with team development and new product creation.

Key responsibilities

• Plan and supervise daily bakery production schedules while maintaining consistent quality, portioning, and presentation.
• Monitor compliance with food safety, hygiene, and quality standards and resolve production issues promptly.
• Supervise and train bakery staff, allocate tasks, enforce discipline, and foster a positive team culture.
• Participate in developing new bakery products, improve existing recipes for quality and cost efficiency, and support pilot testing.
• Coordinate raw material planning with procurement, monitor ingredient usage, maintain production records, and support cost‑control initiatives.
• Work closely with sales, catering, and logistics teams to fulfill institutional and bulk orders and drive process improvements.

Required profile

• Certificate or Diploma in Baking, Pastry, Food Production, or a related field.
• Minimum 5 years of hands‑on bakery experience, including at least 2 years in a supervisory or lead role.
• Experience in commercial or institutional baking is an advantage.
• Practical understanding of food safety and hygiene standards.
• Basic computer skills for reporting.
