Sous Chef

About the role

The Fairmont Mara Safari Club is seeking a motivated Sous Chef to join its culinary team. Reporting to the Cluster Executive Sous Chef, you will help deliver high‑quality a la carte and buffet dishes while ensuring exceptional guest experiences in a luxury safari setting.

Key responsibilities

• Prepare and present food items consistently according to hotel recipes and standards for both a la carte and buffet services.
• Conduct daily shift briefings, maintain open communication with outlet managers, and respond to guest feedback.
• Develop creative menu items, oversee food presentation, and stay knowledgeable about daily features and promotions.
• Maintain inventory levels and coordinate with suppliers to ensure timely stock.
• Ensure proper staffing and scheduling in line with productivity guidelines.
• Monitor cleanliness and maintenance of work areas, utensils, and equipment.
• Uphold all safety and sanitation policies when handling food and beverage.

Required profile

• Diploma or certification in a culinary discipline (or equivalent experience).
• Previous experience in a professional kitchen, with strong interpersonal skills and reliability.
• Ability to work collaboratively, focus on guest needs, and remain calm under pressure.
• Physical ability to stand for long periods, lift up to 25 lbs, and perform kitchen tasks such as kneeling and pushing.
