Assistant Processing Manager – Fish Processing

About the role

Victory Farms is seeking an Assistant Processing Manager to support daily fish processing operations at its Westlands facility. You will work closely with senior management to ensure production targets are met while maintaining the highest standards of food safety and quality.

Key responsibilities

• Assist in planning, organizing and monitoring daily fish processing activities.
• Ensure production schedules are achieved and resource utilization is optimized.
• Coordinate receiving, gutting, washing, sorting, chilling and dispatch operations.
• Monitor product quality, investigate issues and implement corrective actions.
• Maintain traceability records and ensure compliance with food‑safety standards.
• Supervise production supervisors, line leaders and operators; conduct briefings and allocate work.
• Train staff on processing procedures, hygiene and workplace safety.
• Collaborate with maintenance to report breakdowns and support preventive maintenance.
• Track processing yields, production efficiencies and support inventory control.
• Promote teamwork and a positive work environment.

Required profile

• Bachelor’s degree in Fisheries Technology, Food Science, Food Processing or related field.
• 5‑7 years progressive experience in fish processing or seafood manufacturing.
• At least 3 years in a senior supervisory or management role.
• Proven record of meeting production targets and optimizing resources.
• Strong background in food safety, quality assurance and regulatory compliance.
• Experience in production planning, cold‑chain management and dispatch operations.
