A La Carte Executive Sous Chef

About the role

The A La Carte Executive Sous Chef will join Jumba Ruins Monsoon’s beachfront kitchen in Mombasa, Kenya. Reporting to the Executive Chef, you will help lead the a‑la‑carte operation, ensuring every made‑to‑order seafood dish meets the restaurant’s high standards of quality, consistency and presentation.

Key responsibilities

• Plan and execute seafood‑focused a‑la‑carte menus.
• Supervise food preparation and cooking, managing kitchen sections during busy service periods.
• Train, mentor and schedule kitchen team members.
• Oversee mise en place, enforce food safety, hygiene and cost‑control standards.
• Collaborate on menu development and adapt dishes to guest feedback and seasonal ingredient availability.
• Coordinate closely with front‑of‑house teams to ensure smooth service.

Required profile

• Proven a‑la‑carte cooking expertise, especially with seafood and grilled dishes, in fine or high‑quality casual dining.
• Strong leadership and team‑management abilities, including training and performance oversight.
• Experience in menu planning, costing and working with seasonal, locally sourced ingredients.
• Solid knowledge of food safety, hygiene regulations and HACCP or equivalent standards.
• Ability to work efficiently in a high‑volume, fast‑paced environment while maintaining consistency.
• Relevant culinary education or certification and several years of progressive kitchen experience, including a Sous Chef or similar role.
• Flexibility to work weekends, holidays and extended hours as required.
