Head Baker (Bread Production Plant)

About the role

The Head Baker will lead all bread production activities at our commercial bakery plant in Westlands, Nairobi. You will be responsible for ensuring efficient operations, consistent product quality, and strict compliance with food safety standards while supporting product development and cost management.

Key responsibilities

• Plan and oversee daily bread production schedules based on demand forecasts.
• Allocate resources, monitor workflow, and optimise plant capacity.
• Develop, review and standardise recipes, product sizing and specifications.
• Support costing exercises, monitor ingredient usage and recommend pricing adjustments.
• Conduct routine quality checks and enforce HACCP, GMP and hygiene standards.
• Maintain cleanliness of production areas and equipment.
• Supervise, schedule and train bakery staff, fostering a safety‑first culture.

Required profile

• Minimum 5 years of experience in commercial bakery production.
• Proven ability to manage production planning and inventory.
• Strong knowledge of food safety regulations and quality assurance.
• Leadership experience with a team of bakery operators.
