Sous Chef – Luxury Safari Lodge

About the role

Reporting to the Cluster Executive Sous Chef, the Sous Chef will support kitchen operations, ensure high‑quality food preparation, and deliver exceptional guest service at the Fairmont Mara Safari Club, a luxury tented lodge in Maasai Mara, Kenya.

Key responsibilities

• Prepare a la carte and buffet menu items consistently according to hotel recipes and standards.
• Conduct daily shift briefings and maintain clear communication with outlet managers regarding guest feedback.
• Develop creative menu presentations and maintain full knowledge of daily features and promotions.
• Manage staffing, scheduling, and ensure cleanliness and maintenance of work areas, utensils, and equipment.
• Adhere to safety, sanitation, and kitchen policies while interacting with guests at tables.

Required profile

• Diploma or certification in a culinary discipline (or equivalent experience).
• Previous experience in a culinary environment with strong interpersonal skills.
• Highly responsible, reliable, and able to work cohesively with the team.
• Ability to remain calm, courteous, and focused on guests’ needs at all times.
