Assistant Processing Manager – Fish Processing

About the role

The Assistant Processing Manager will support daily fish processing operations, ensuring production targets are met while maintaining high standards of quality and food safety. This role reports to senior management and works closely with quality, maintenance, and inventory teams.

Key responsibilities

• Assist in planning, organizing, and monitoring daily fish processing activities and production schedules.
• Coordinate receiving, gutting, washing, sorting, chilling, and dispatch operations to optimize productivity.
• Monitor resource utilization, minimize product losses, and ensure efficient use of labour and equipment.
• Ensure compliance with food safety standards, work with Quality Control, and maintain traceability documentation.
• Supervise production supervisors, line leaders, and operators; conduct briefings, allocate work, and train staff on safety and hygiene.
• Coordinate with maintenance to ensure equipment reliability and support preventive maintenance.
• Track processing yields, support inventory control, and assist in cost‑control initiatives.
• Prepare daily, weekly, and monthly production reports and analyse key performance indicators.

Required profile

• Bachelor’s degree in Fisheries Technology, Food Science, Food Processing or related field.
• 5‑7 years progressive experience in fish or seafood processing, with at least 3 years in a senior supervisory or management role.
• Proven track record in production planning, cold‑chain management, and achieving operational efficiency.
• Strong background in food safety, quality assurance, and regulatory compliance.
