Quality Control Officer - Bakery

About the role

Brites Management Services is hiring a full-time Quality Control Officer in Mlolongo within the food manufacturing sector. The officer ensures that all products consistently meet the company's quality, food safety and regulatory standards by monitoring production processes, carrying out quality inspections and laboratory tests, implementing food safety systems and working closely with production teams to minimise defects and improve quality.

Key responsibilities

• Monitor all stages of the bakery production process and inspect raw materials, work-in-progress and finished products against specifications for appearance, texture, taste, weight, packaging and shelf life.
• Ensure compliance with food safety regulations, GMP, HACCP and ISO 22000, and monitor sanitation and hygiene in the facility.
• Carry out physical, chemical and microbiological tests, monitor critical control points, verify equipment calibration and keep accurate testing records.
• Inspect incoming raw materials and packaging, verify supplier documentation and certificates, and follow up on non-conforming materials with procurement and suppliers.
• Maintain quality records, inspection reports, corrective action logs and performance reports, and ensure documentation is audit-ready.
• Investigate quality issues, recommend corrective and preventive actions, and train production staff on quality standards and food safety.
• Take part in internal and external audits and support regulatory inspections and customer audits.

Required profile

• Degree in Food Science and Technology or a related field.
• At least 5 years of experience in quality control within bread, bakery or flour manufacturing.
• Strong understanding of food safety regulations and quality management systems.

Required skills

• Knowledge of HACCP, ISO 22000 and GMP (preferred)
• Physical, chemical and microbiological testing
