About the role
Jumba Ruins Monsoon is seeking a full‑time Chef De Cuisine to lead its kitchen in Mombasa County, Kenya. The role focuses on delivering high‑quality Mediterranean and seafood dishes while creating a memorable dining experience for both locals and expatriates.
Key responsibilities
- Prepare and plate high‑quality Mediterranean and fresh‑seafood dishes.
- Develop innovative menus that showcase local seafood.
- Ensure strict adherence to food safety and hygiene standards.
- Source, receive, and maintain fresh ingredients from local fishermen.
- Supervise meal preparation and coordinate kitchen workflow.
- Manage and train kitchen staff, fostering teamwork and efficiency.
- Control inventory, monitor costs, and meet budgetary goals.
- Deliver consistent, excellent culinary experiences to guests.
Required profile
- Extensive experience in culinary arts with a focus on seafood cuisine.
- Proven ability in menu development and innovation.
- Strong leadership, team‑management, and organizational skills.
- Proficiency in food safety, sanitation, and nutritional best practices.
- Creativity and innovation in culinary techniques.
- Experience in high‑end dining establishments, preferably coastal or seafood‑focused.
- Formal culinary education or equivalent professional training preferred.
