Beef Cutter / Butcher & Grill Man

About the role

We are seeking an experienced Beef Cutter, Butcher and Grill Man to join our busy restaurant in Westlands, Nairobi. The role involves preparing a variety of meat products, grilling to order, and ensuring high standards of hygiene and customer service.

Key responsibilities

• Cut, trim, debone and portion meat according to standard specifications.
• Prepare beef, poultry, goat and other meat products for display or kitchen use.
• Grill beef, goat, chicken, liver, ribs and other items using charcoal, gas or flame.
• Minimise waste through efficient cutting techniques and grind/mince meat as required.
• Weigh products accurately, inspect for quality and freshness, and maintain proper storage temperatures.
• Rotate stock using FIFO, maintain hygiene and sanitation, and clean tools and work surfaces regularly.
• Operate and maintain butchery equipment such as knives, saws, grinders and weighing scales.
• Record daily sales, handle POS/computer tasks, and ensure proper waste disposal.

Required profile

• Male candidates preferred.
• Minimum KCSE certificate; food production, butchery or related certificate is an advantage.
• At least 3 years of experience in a busy hotel, restaurant or retail butchery.
• Physically fit, able to stand for long periods and work under pressure.
• Valid food handler’s medical certificate and good conduct certificate.
• Person of integrity with strong customer service orientation.

Required skills

• Charcoal, gas and flame grilling techniques.
• Meat cutting, deboning and portioning.
• Grinding and mincing meat.
• Operation of POS/computer systems.
• Use of butchery tools (knives, saws, grinders, weighing scales).
• Knowledge of food safety and hygiene standards.
