Chef de Partie - Hot Kitchen Station

About the role

Brites Management Services is hiring a full-time Chef de Partie for its hot kitchen, based on Kiambu Road. The post covers a specific station such as Sauté, Grill or Roast, with a salary of KShs 45,000.

Key responsibilities

• Take full ownership of the assigned hot kitchen section, keeping it fully stocked and prepared ahead of service (mise en place).
• Cook high-quality dishes to recipe, portion control and presentation standards, maintaining consistent plate presentation, flavour and food temperature.
• Monitor stock levels, place internal store requisitions on time and use FIFO storage to keep food fresh.
• Control portions and ingredients to minimise waste and optimise kitchen cost margins.
• Direct and coach Commis Chefs and kitchen stewards, and coordinate with other stations so table orders are ready and dispatched together.
• Maintain clean tools, workstations and chillers, and enforce food safety regulations and SOPs on cross-contamination and personal hygiene.

Required profile

• Diploma in Culinary Arts, Food and Beverage Production or an equivalent qualification from a recognised hospitality institution.
• 3 to 5 years of active experience in a fast-paced professional hot kitchen.
• 1 to 2 years as a Chef de Partie or Senior Commis.
• Prior experience in fine-dining restaurants or luxury boutique hotels is highly preferred.

Required skills

• Classical hot kitchen techniques: braising, searing, grilling, poaching and sauce reduction.
• Strong sense of flavour profiles, culinary timing and advanced plate presentation.
