Head Chef

About the role

Brites Management Services is hiring a Head Chef in Nairobi for a full-time hospitality position. The role covers kitchen operations, menu planning, food costing, team leadership and food safety compliance.

Key responsibilities

• Oversee day-to-day kitchen operations, supervise food preparation and presentation, and ensure timely meal service.
• Develop and update menus, create recipes, standardize procedures and introduce new dishes.
• Prepare food costing, monitor usage and portion control, manage inventory and procurement, and keep accurate stock records.
• Supervise, train and mentor kitchen staff, allocate duties and schedules, and maintain discipline.
• Ensure compliance with food safety, hygiene and sanitation regulations, keep the kitchen clean and organized, and check quality regularly.
• Address food-related feedback professionally and work with management to improve guest dining experiences.

Required profile

• Diploma or certificate in Culinary Arts, Food Production or a related field.
• At least 5 years of proven experience in food production, including at least 2 years in a supervisory or Head Chef capacity.
• Experience in inventory management, staff supervision and food safety compliance.
• Ability to work in a fast-paced environment.

Required skills

• Knowledge of food costing, inventory management and budget control.
• Strong culinary and food presentation skills.
• Leadership, team management, organizational and planning skills.
