About the role

Peponi's, a contemporary Neapolitan‑style pizza restaurant in Nairobi, is looking for a Head Pizza Chef to join its vibrant kitchen team. Working closely with the Head Chef and owners, you will help refine recipes, maintain consistency, and lead the kitchen in delivering world‑class pizza and exceptional guest experiences.

Key responsibilities

• Prepare and cook Neapolitan‑style pizzas to the highest standard, ensuring consistency and quality.
• Manage the daily dough‑making process, including fermentation, proofing, and shaping.
• Operate and maintain the wood‑fired oven, controlling temperature and timing.
• Collaborate on menu development, experimenting with toppings, seasonal specials, and new ingredients.
• Train and guide kitchen team members to uphold Peponi’s standards of quality and service.
• Maintain kitchen organization, cleanliness, and food‑safety compliance at all times.
• Monitor inventory, manage prep lists, and coordinate with suppliers to ensure freshness and efficiency.

Required profile

• Proven experience as a Pizza Chef, Pizzaiolo, or similar role in a fast‑paced restaurant.
• Deep understanding of dough fermentation, ingredient balance, and wood‑fired oven techniques.
• Strong attention to detail and ability to maintain consistency under pressure.
• Leadership qualities and a collaborative spirit.
• Commitment to cleanliness, organization, and professional standards.
• Flexibility to work evenings, weekends, and holidays as needed.
