Sous Chef – Live-In Lodge

About the role

&Beyond is looking for an experienced Sous Chef to assist its Head Chef in running the kitchen and delivering excellent guest experiences at its Bateleur Camp lodge in Maasai Mara, Kenya. This is a permanent live-in position.

Key responsibilities

• Assist the Head Chef in managing kitchen operations so that service runs smoothly and efficiently.
• Lead the kitchen and canteen teams and keep professional standards high.
• Monitor food budgets and follow financial controls for guest and staff meals.
• Ensure compliance with health, safety and hygiene standards, including HACCP protocols.
• Manage food orders, stock control and resource use with a first-in-first-out system.
• Meet guest dietary requirements and keep guest food satisfaction scores steady while managing cost per head.
• Conduct stock takes, monitor prepped food and help adjust menus to improve service.
• Train and mentor kitchen staff, keeping records of training, and enforce discipline and correct personnel management, including shift scheduling and attendance.

Required profile

• At least 2 years of relevant experience; experience in the service industry dealing with guests and staff is preferred.
• Previous work in a luxury lodge or hospitality setting.
• Ability to cater to guest dietary preferences.
