Demi Chef de Partie

About the role

A hotel belonging to the Accor network, which brings together more than 45 brands, 5,500 hotels and 10,000 restaurants, is looking for a Demi Chef de Partie in Nairobi. The post is full-time and involves supervising a kitchen section, preparing mise en place and producing dishes according to recipes and standards.

Key responsibilities

• Replace the Chef de Cuisine or Sous Chef when absent and help with mise en place for breakfast, lunch and dinner
• Check the fridge, verify leftovers and inform the Chef of the day's requisitions
• Optimize product use and control wastage and spoilage, reporting non-conformances immediately
• Produce dishes according to recipes, photos and set standards, and assist the Chef in recipe and costing updates
• Supervise and train kitchen staff, delegate tasks and ensure the section is adequately staffed
• Keep the workplace clean, sanitized and tidy, and cover mise en place with foil or film before storing it
• Follow kitchen P&P and SOPs, hygiene standards and safety policies, and report hazards
• Clean equipment and the kitchen at the end of shift and help other outlets when asked
