Hospitality Operations Manager

About the role

Brites Management Services is hiring a Hospitality Operations Manager in Murang'a. The role oversees the day-to-day operations and overall performance of the hospitality establishment, coordinating the kitchen, restaurant, bar, beverage and customer service functions. The salary is described as competitive.

Key responsibilities

• Coordinate daily restaurant, kitchen and bar operations, including opening and closing, shift handovers, staff deployment and service readiness.
• Monitor food preparation, order processing, serving times, beverage preparation and order accuracy, and carry out routine inspections of menus, equipment, table setup, bar readiness and cleanliness.
• Monitor stock levels of food, alcohol and non-alcoholic beverages and supplies, supervise receipt, inspection, storage and recording of stock, and conduct regular physical stock counts and reconciliations.
• Prepare and monitor departmental budgets, daily sales reports and food and beverage expenditure reports, and control costs through portion control, recipe costing and selling price reviews.
• Reconcile daily sales against cash, card and mobile payment records, and review voids, discounts and complimentary items.
• Prepare duty rosters, train staff on menu knowledge, food and beverage preparation, hygiene and customer complaint resolution, and monitor attendance, punctuality and performance.
• Enforce food safety, temperature monitoring, sanitation and cleaning procedures, handle escalated customer complaints and maintain operational records, inspection checklists and compliance documentation.

Required profile

• Diploma or degree in Hospitality Management, Hotel or Restaurant Management, Food and Beverage Management, Culinary Arts or a related field from a recognised institution.
• At least five years of experience managing a restaurant, hotel food and beverage department, catering operation or similar high-volume hospitality business.
• Demonstrable direct responsibility for both kitchen and bar or beverage operations.
• Experience supervising multidisciplinary hospitality teams and managing daily service operations.

Required skills

• Managing inventory, procurement, stock reconciliations and supplier relationships.
• Preparing and monitoring budgets, controlling operating costs and producing basic financial or operational reports.
