Hot Kitchen Chef

About the role

Brites Management Services is hiring a full-time Hot Kitchen Chef for a hospitality position based on Jogoo Road. The role covers food preparation, quality and safety, inventory and cost control, and supervising junior kitchen staff.

Key responsibilities

• Prepare, cook and present high-quality hot meals according to approved recipes, portion sizes and presentation standards, including local and international dishes and dietary/allergy requirements.
• Complete mise en place and ensure ingredients, equipment and workstations are ready before service.
• Handle, prepare and store food in line with food safety, hygiene and HACCP standards, keeping the kitchen clean and sanitary.
• Monitor inventory, request replenishment, take part in stock-taking and apply FIFO, proper labelling and storage to minimise waste.
• Maintain kitchen equipment, coordinate with other kitchen sections and assist with menu planning and new menu items.
• Supervise and coach junior kitchen staff, foster teamwork and take part in departmental meetings and training.

Required profile

• Diploma or degree in Culinary Arts, Professional Cookery, Food Production or a related field.
• At least 2-3 years of experience in a professional hot kitchen in a hotel, restaurant, resort or catering establishment.
• Preferred: experience with local and international cuisine and in a high-volume production environment.

Required skills

• Strong culinary skills and knowledge of cooking techniques.
• Good understanding of food safety, sanitation and hygiene standards.
• Ability to work efficiently under pressure in a fast-paced kitchen.
• Excellent time management and organisational skills.
