Sous Chef

About the role

The Fairmont Mara Safari Club is seeking a motivated Sous Chef to support its culinary operations in the heart of the Mara Savannah. Reporting to the Cluster Executive Sous Chef, you will help deliver high‑quality a la carte and buffet dishes while ensuring an exceptional guest experience.

Key responsibilities

• Maintain consistency in food preparation according to hotel recipes and standards for both a la carte and buffet menus.
• Conduct daily shift briefings, communicate standards, and liaise with outlet managers on guest feedback.
• Develop creative menu items and presentations to enhance the food offering.
• Interact with guests at tables, promote daily features, and respond to special requests.
• Manage staffing, scheduling, and productivity guidelines for the kitchen team.
• Ensure cleanliness, maintenance, and safety of all work areas, utensils, and equipment.

Required profile

• Diploma or certification in a culinary discipline (or equivalent experience).
• Previous experience in a professional kitchen, preferably at a hotel or resort.
• Strong interpersonal skills, reliability, and ability to work cohesively with a team.
• Calm, courteous demeanor with a focus on guest needs.
