About the role
Peponi's is a contemporary Neapolitan‑style pizza restaurant in Nairobi seeking a full‑time Sous Chef to act as the Head Chef’s right hand. The successful candidate will lead the kitchen during service, ensure consistency of our pizza, and help develop a growing team.
Key responsibilities
- Support the Head Chef in daily kitchen operations and service flow.
- Build, implement and continuously improve SOPs for dough, prep and station setup.
- Maintain high standards for every dish leaving the pass.
- Train, mentor and supervise pizzaioli, demi‑CDPs and commis chefs.
- Oversee daily prep, dough management and stock levels to keep service smooth.
- Monitor food costs, portion control and waste, and assist with ordering and supplier relationships.
- Ensure compliance with food safety and hygiene regulations.
- Coordinate with front‑of‑house staff to optimise service.
- Contribute to menu development and testing.
Required profile
- Proven experience as a Sous Chef or senior CDP ready to step up.
- Strong knowledge of Neapolitan pizza or willingness to master it.
- Demonstrated leadership and team‑building abilities.
- Integrity, accountability and strong communication skills.
Required skills

- Inventory and stock management.
- Food cost control and portion management.
- Understanding of food safety and hygiene standards.
