Assistant Head of Kitchen

About the role

Our client, a hospitality establishment in Karen, Nairobi, seeks an experienced Assistant Head of Kitchen to support daily kitchen operations and uphold high standards of food quality, hygiene, and efficiency.

Key responsibilities

• Assist the Head of Kitchen in managing daily kitchen operations.
• Supervise and coordinate kitchen staff during food preparation and service.
• Plan and organise food preparation, ensuring recipes and quality standards are followed.
• Maintain consistency in taste, presentation, and portion control.
• Monitor kitchen stock, inventory, proper storage, and handling of food and ingredients.
• Control food wastage and support effective portion control.
• Uphold high standards of kitchen cleanliness and hygiene, implementing food safety and health standards.
• Support training and mentoring of junior kitchen staff.
• Coordinate kitchen activities during busy service periods and report issues to the Head of Kitchen.
• Take responsibility for kitchen operations in the Head’s absence when required.

Required profile

• Proven experience as an Assistant Head Chef, Sous Chef, Senior Cook or similar supervisory role.
• Good knowledge of food preparation, kitchen operations, stock handling and portion control.
• Understanding of food hygiene and safety requirements.
• Strong teamwork and communication skills.
• Ability to work efficiently in a fast‑paced kitchen environment.
• Relevant culinary training or certification is an advantage.
