Chef de Partie – Kitchen Team Leader

About the role

Peponi’s is launching a contemporary Neapolitan‑style pizza restaurant in Nairobi and is looking for a Chef de Partie to lead the back‑of‑house team. You will work closely with the Head Chef and owners to ensure smooth service, consistent quality, and a welcoming atmosphere for guests.

Key responsibilities

• Oversee daily kitchen operations, guaranteeing efficiency and adherence to Peponi’s standards.
• Support the Head Chef in recipe execution, presentation, and consistency of all dishes.
• Supervise, motivate, and develop kitchen staff, fostering teamwork and clear communication.
• Manage prep schedules, inventory, and supplier relationships to maintain freshness and control costs.
• Maintain rigorous cleanliness, hygiene, and food‑safety standards at all times.
• Assist in menu planning, costing, and the rollout of seasonal specials.
• Monitor portion control, waste, and kitchen organization to optimise performance.

Required profile

• Proven experience as a Chef de Partie, Kitchen Manager, Sous Chef, or a similar leadership role in a fast‑paced restaurant.
• Strong understanding of kitchen operations, team management, and food‑safety protocols.
• Hands‑on leader who thrives in an energetic, collaborative environment.
• Excellent organisational and communication abilities.
• Passion for great food, especially pizza and ingredient‑driven cooking.
• Ability to manage multiple priorities while maintaining quality under pressure.
• Flexibility to work evenings, weekends, and holidays as needed.

Required skills

• Knowledge of kitchen workflow and food‑safety standards.
• Experience with inventory control and cost management.
