Chef de Partie – Mediterranean Cuisine

About the role

Accor is seeking a motivated Chef de Partie to lead the Mediterranean cuisine station in a luxury hotel environment. You will supervise the preparation of mise‑en‑place, ensure high‑quality output, and support the Executive Chef in delivering exceptional dining experiences.

Key responsibilities

• Supervise, coordinate and participate in the preparation of all mise‑en‑place and menu set‑up.
• Determine daily production quantities based on occupancy and function requirements.
• Prepare requisitions for groceries and perishable items, aligning with hotel occupancy and replenishment needs.
• Dispense food only after Micros POS checks or when the system fails.
• Taste dishes during preparation to guarantee flavor and presentation standards.
• Maintain cleanliness of utensils, equipment, workstations and cold rooms at all times.
• Ensure proper storage of leftovers after each function to prevent spoilage.
• Perform any additional duties assigned by the Executive Chef.

Required profile

• Proven experience as a Chef de Partie or equivalent in a luxury hotel or fine‑dining establishment.
• Culinary degree or diploma preferred.
• Strong knowledge of diverse cuisines, cooking techniques and international culinary trends.
• Excellent leadership, communication and interpersonal abilities.
• Ability to thrive in a fast‑paced environment and handle pressure professionally.
• Flexibility to work evenings, weekends and holidays.
• Knowledge of HACCP and food safety standards.
• Passion for culinary excellence and continuous learning.
