Chief Steward

About the role

The Chief Steward will lead all stewarding operations at Fairmont The Norfolk, ensuring a hygienic, safe and efficient kitchen environment across all food‑and‑beverage outlets. Working closely with the Culinary and F&B teams, the role guarantees the highest standards of cleanliness, equipment care and compliance with health regulations.

Key responsibilities

• Implement and enforce rigorous cleanliness and sanitation protocols throughout kitchen areas and service outlets.
• Oversee proper handling, cleaning and storage of kitchen equipment, utensils and tableware.
• Ensure compliance with health, safety and food‑hygiene regulations, including staff training and certification.
• Develop and maintain inventory systems for cleaning supplies and equipment.
• Collaborate with Culinary and F&B management to meet operational needs during peak periods and special events.
• Conduct regular inspections of stewarding areas to uphold standards of organization.
• Implement waste‑management and recycling programmes to support sustainability.
• Recruit, train, schedule and evaluate the stewarding team.
• Maintain accurate documentation such as cleaning logs, maintenance records and incident reports.
• Serve as liaison with health inspectors during audits.
• Manage the stewarding department budget and control costs.

Required profile

• Minimum 3‑5 years of extensive stewarding experience in a luxury hotel or resort.
• Proven ability to lead and develop a stewarding team.
• Strong knowledge of health, safety and food‑hygiene regulations.
• Experience in inventory management and budgeting.
• Excellent organizational and inspection skills.
