Head Baker – Lead Bakery Operations

About the role

Our client, a reputable hotel, is looking for an experienced and passionate Head Baker to lead its bakery operations. You will be responsible for delivering high‑quality baked goods, managing a bakery team, and ensuring compliance with food safety standards while driving innovation and guest satisfaction.

Key responsibilities

• Plan, organise and oversee the preparation of breads, cakes, pastries, desserts and other baked items, maintaining consistent quality.
• Develop new recipes and improve existing products in line with customer preferences and market trends.
• Prepare production schedules based on orders, sales forecasts and inventory levels.
• Monitor stock levels of ingredients and supplies, placing orders to prevent shortages and minimise waste.
• Ensure compliance with HACCP, food safety, hygiene, sanitation and occupational health regulations.
• Monitor equipment performance and coordinate routine maintenance and repairs.
• Implement cost‑control measures to improve productivity, reduce wastage and maximise profitability.
• Maintain accurate production, inventory and quality‑control records.
• Collaborate with management on seasonal products, promotions and special orders.
• Foster a positive, disciplined and high‑performing work environment.

Required profile

• Diploma or Certificate in Culinary Arts, Pastry Arts or a related field.
• Minimum 3 years of pastry production experience in a busy hotel environment, preferably as a Pastry Demi‑CDP or CDP.
• Strong leadership and people‑management abilities.
• Excellent planning, organisation and time‑management skills.
• High attention to detail and a commitment to quality.
