Food & Beverage Manager – Hospitality Operations

About the role

The Food & Beverage Manager will own the catering operator relationship and maintain brand standards across Unity Homes’ restaurants in Nairobi. This on‑site role ensures quality, compliance, and an exceptional guest experience while managing supplier lists and cost control.

Key responsibilities

• Manage the Catering & Restaurant Management Agreement, monitor service levels and enforce standards.
• Set and maintain the Brand Standards Manual for menu, recipes, plating, service style, hygiene and guest experience.
• Approve and control the Approved Supplier List, negotiate pricing and ensure compliance.
• Run quarterly quality programmes including mystery‑shopper visits, hygiene audits and guest feedback, linking results to performance‑based fee adjustments.
• Oversee POS operations, daily revenue reconciliation and banking, as Unity Homes controls the till directly.
• Monitor regulatory compliance (public health, food hygiene, fire safety, food‑handler certification) and keep risk documentation current.
• Report monthly on spend, wastage, incidents and operator performance against KPIs.
• Handle escalated guest complaints and approve refunds or goodwill gestures within authority limits.

Required profile

• Solid experience in food & beverage or hospitality management in Kenya, preferably with contract catering or multi‑outlet oversight.
• Hands‑on experience in supplier management, procurement and food cost control.
• Working knowledge of Kenyan food safety and public health licensing requirements.
• Financial literacy – ability to read a restaurant P&L, manage budgets and reconcile POS data.
• Confidence to hold external contractors accountable to written standards.
• Strong bias toward guest experience and quality over margin maximisation.
• Diploma or degree in hospitality management, culinary arts or related field (optional if strong operational track record).
