Sous Chef

About the role

Peponi's, a fast‑growing Neapolitan‑style pizza restaurant in Nairobi, is looking for a full‑time Sous Chef to support the Head Chef. You will act as the right hand in the kitchen, ensuring smooth service, maintaining high standards, and stepping in to lead when the Head Chef is away.

Key responsibilities

• Assist the Head Chef with daily kitchen operations and lead the team during service.
• Maintain consistency and quality of every dish that leaves the pass.
• Oversee prep work, stock levels, and place orders to keep the kitchen well‑supplied.
• Train, mentor and supervise kitchen staff, fostering a collaborative environment.
• Monitor food costs, portion control and waste, aiming to minimise expenses.
• Ensure compliance with food safety and hygiene regulations.
• Collaborate with front‑of‑house to deliver seamless service.
• Contribute to menu development, testing and seasonal updates.

Required profile

• Proven experience as a Sous Chef or senior Chef de Partie ready to step up.
• Strong leadership, calm under pressure and a commitment to integrity.
• Flexibility to work evenings, weekends and holidays.
• Passion for food, hospitality and continuous improvement.
