Executive Chef – Kenyan & International Cuisine

About the role

The Executive Chef will lead all kitchen operations for a dynamic restaurant in Nairobi, delivering a blend of Kenyan and International dishes with a signature focus on curry specialties. You will manage the kitchen team, ensure high culinary standards, and drive cost‑effective menu execution.

Key responsibilities

• Design and develop menus that combine traditional Kenyan fare with global cuisine, highlighting a curated curry line.
• Standardise recipes, portion sizes and costing to control waste and optimise profitability.
• Oversee daily kitchen workflow, from prep to service, ensuring food safety, hygiene and sanitation compliance.
• Manage inventory, supplier relationships and equipment maintenance.
• Recruit, train, mentor and schedule junior cooks and kitchen staff, fostering a collaborative culture.
• Report kitchen performance, challenges and improvement plans to senior management.

Required profile

• Minimum 4 years (48 months) experience as a Chef or Executive Chef with proven versatility in Kenyan and International cuisines.
• Demonstrated expertise in curry preparation – spice blending, regional styles and flavor balance (will be tested).
• Strong background in portion control, costing and inventory management.
• Culinary certification or diploma preferred.
