Executive Pastry Chef – Arabian Sweets Specialist

About the role

We are looking for an Executive Pastry Chef with deep expertise in authentic Arabian sweets to lead our pastry department in Nairobi. The successful candidate will combine centuries‑old Middle Eastern techniques with modern luxury presentation, ensuring our brand becomes a premier destination for world‑class desserts.

Key responsibilities

• Oversee daily high‑volume production of traditional Arabian pastries such as baklava, kunafa, ma’amoul, basbousa and qatayef.
• Maintain consistent quality, taste, texture and visual standards across all pastry lines.
• Design and develop a premium menu that blends classic desserts with innovative fusion creations.
• Recruit, train and mentor a team of pastry chefs, bakers and kitchen assistants, transferring specialized techniques.
• Implement strict quality‑control procedures, standard recipes, production schedules and HACCP compliance.
• Manage inventory, sourcing premium ingredients (pistachios, rose water, dates, ghee) and control food costs.
• Ensure a clean, safe and organized kitchen environment through regular audits.

Required profile

• Minimum 3 years of experience as a pastry chef, preferably in luxury hospitality.
• Demonstrated mastery of Arabian and Levantine pastry techniques.
• Proven ability to lead and develop kitchen teams.
• Strong knowledge of food safety, sanitation and HACCP standards.
