Assistant Food & Beverage Manager

About the role

The Zanzibar Collection, an award‑winning group of boutique luxury hotels, is seeking an energetic Assistant Food & Beverage Manager to support the F&B department across its restaurants, bars and other dining venues. Reporting to the Food & Beverage Manager and working closely with the Executive Chef, you will help ensure exceptional guest experiences in a high‑end resort setting.

Key responsibilities

• Assist with day‑to‑day management of all food & beverage outlets.
• Maintain high standards of service, presentation and guest engagement.
• Supervise, coach and motivate F&B teams, fostering a culture of service excellence.
• Be visible on the floor, interact with guests and resolve feedback promptly.
• Support revenue generation, cost control, stock management and profitability.
• Help with scheduling, training, performance management and operational planning.
• Coordinate closely with the Executive Chef to ensure seamless kitchen‑service collaboration.
• Ensure compliance with food safety, hygiene and operational standards.

Required profile

• 2–3 years of F&B experience in a 4‑ or 5‑star hotel, luxury resort or comparable international environment.
• Previous supervisory or management experience in food & beverage.
• Relevant degree or higher diploma in Hospitality or Food & Beverage Management.
• Strong commercial awareness and ability to manage costs and stock.
• Excellent communication, interpersonal skills and a guest‑focused attitude.

Required skills

• Knowledge of luxury service standards and F&B operations.
• Experience with MICROS, Symphony or OPERA systems (preferred).
