About the role

Fairmont Mount Kenya, a luxury hotel in the Mount Kenya Wildlife Conservancy, is looking for two experienced Chef de Parties to join its culinary team. The role suits someone who thrives in a fast-paced luxury hospitality setting and is committed to high food quality and guest experience. The Chef de Partie plays a key leadership role in the kitchen, ensuring smooth daily operations, upholding culinary standards and supporting team development.

Key responsibilities

• Lead daily shift briefings in the absence of the Junior Sous Chef and Sous Chef
• Promote a professional, disciplined and engaging work environment
• Supervise, coach and motivate kitchen colleagues to achieve excellence
• Ensure adherence to food quality, hygiene and safety standards at all times
• Monitor food preparation, presentation and consistency across all dishes
• Maintain proper stock control, requisitions and minimise wastage
• Oversee cleanliness, product rotation and storage standards in all kitchen areas
• Check mise en place regularly to ensure freshness and quality
• Support ongoing training and development of culinary team members
• Liaise with outlet chefs and act as a key link between kitchen management and the team
• Maintain accurate records such as temperature logs and hygiene checklists
• Know emergency procedures and report incidents promptly

Required profile

• Diploma or certification in Culinary Arts or a related field
• Minimum 2-3 years' experience in a similar role within a reputable hotel or restaurant
• Proven leadership and team management skills
• Excellent communication and organisational abilities
