Chef de Partie

About the role

Fairmont Mount Kenya, a luxury hotel in the Mount Kenya Wildlife Conservancy near Nanyuki, is looking for an experienced Chef de Partie to join its culinary team. The role is a key leadership position in the kitchen, ensuring smooth daily operations, high culinary standards and support for team development in a fast-paced luxury hospitality setting.

Key responsibilities

• Lead daily shift briefings when the Junior Sous Chef and Sous Chef are absent
• Supervise, coach and motivate kitchen colleagues to achieve excellence
• Ensure food quality, hygiene and safety standards are met at all times
• Monitor food preparation, presentation and consistency across all dishes
• Maintain stock control, requisitions and minimise wastage
• Oversee cleanliness, product rotation and storage, and check mise en place regularly
• Support the training and development of team members
• Liaise with outlet chefs and act as a link between kitchen management and the team
• Maintain accurate records such as temperature logs and hygiene checklists, know emergency procedures and report incidents promptly

Required profile

• Diploma or certification in Culinary Arts or a related field
• Minimum 2-3 years' experience in a similar role within a reputable hotel or restaurant
• Proven leadership and team management skills
• Excellent communication and organisational abilities

Required skills

• Strong knowledge of kitchen operations, food safety and quality standards
• Stock control and hygiene record keeping
