Commi Chef

About the role

Fairmont Mount Kenya Safari Club, a luxury hotel in the Mount Kenya Wildlife Conservancy, is looking for a Commi Chef to join its culinary team. The Commi is a junior chef role focused on learning and perfecting culinary techniques, assisting in food preparation and helping the kitchen maintain high standards of hygiene and food production.

Key responsibilities

• Prepare and cook parts of the menu such as starters, soups, sides or desserts, keeping flavor, presentation and portion sizes consistent.
• Help prepare sauces, stocks, garnishes and other key dish components, learning the basic techniques.
• Perform advanced food preparation such as chopping, marinating and seasoning under the direction of the Chef de Partie or Demi Chef de Partie.
• Maintain a well-prepared mise-en-place for your station, coordinate with other stations and label, date and store food safely.
• Taste and adjust dishes, monitor ingredient freshness and quality, and support senior chefs during busy service periods.
• Assist with plating and keep work areas, tools and equipment clean and sanitized.

Required profile

• Diploma or degree in Culinary Arts or Hospitality.
• 3-5 years of hands-on kitchen experience in a professional setting.
• Previous experience in a 5-star or premium hotel in a similar position.
• Ability to work under pressure in a fast-paced environment and as part of a cohesive team.
• Strong planning, organization, communication and problem-solving skills.
