Commi Chef

About the role

Fairmont Mount Kenya Safari Club, a luxury hotel in the Mount Kenya Wildlife Conservancy near Nanyuki, is looking to grow its culinary team with a Commi Chef. This is a junior chef role focused on learning and perfecting culinary techniques, assisting in food preparation and helping the kitchen maintain high standards of hygiene and food quality.

Key responsibilities

• Prepare and cook parts of the menu such as starters, soups, sides and desserts, keeping flavour, presentation and portion sizes consistent.
• Assist with sauces, stocks, garnishes and other key components, and perform advanced prep such as chopping, marinating and seasoning under the direction of the Chef de Partie or Demi Chef de Partie.
• Maintain mise-en-place for your station, coordinate with other stations and label, date and store food safely.
• Taste and adjust dishes, monitor ingredient freshness and quality, and support senior chefs during busy service.
• Assist with plating and keep work areas, tools and equipment clean and sanitized.

Required profile

• Diploma or degree in Culinary Arts or Hospitality.
• 3-5 years of hands-on kitchen experience in a professional setting.
• Previous experience in a 5-star or premium hotel in a similar position.
• Ability to work under pressure in a fast-paced environment and as part of a cohesive team.
• Strong planning, organizational, communication and problem-solving skills.
